The waste that is generated, and accepted by the customer as "normal," in the food service industry is criminal. Unfortunately, it's way too easy, intellectually and physically, to give the customer more than they need (packaging, condiments, plastic flatware, etc.) and let them deal with it. Anna's Taqueria in the Boston area serves its burritos exactly like that. The interesting part is that their parent company is named "Kaizen Corporation."
